You may think that vegetables are boring but think again. These amazingly unique veggies will surely have you reaching for a shovel in your own garden and soon you’ll have green fingers. 

Chinese Pink Celery

Do you like how pink looks on you? Because these leafy greens do. Not only do they give a vibrant touch to an otherwise boring garden, but they also have the same texture we’re used to with a subtle sweetness. Even the baby plants have this bright pink coloration, so you’ll be seeing their exciting bubblegum color throughout the whole season. 

Dragon Tongue Bush Beans

Beans are so underrated so why not put it in the spotlight? These great beans grow in pods with a lovely chartreuse green color along with some purple patterns that give a new dimension in an otherwise empty garden. Dragon Tongue Bush beans aren’t picky, you can eat them shelled or in-pod. These pods grow on a Bush and are about seven inches long. 

Blue Jade Corn

This one is a definite head turner and completely throws our color expectations of corn straight out the window. This sweet variety shows off it’s navy blue color in all its glory. Blue Jade corn grows on two or three-foot stalks and is a good variety to grow in containers. 

Asparagus Pea

Interestingly, this vegetable isn’t actually related to peas or asparagus but is called Asparagus pea because of the form and flavor it shares with both its distant cousins, twice removed. Asparagus pea, also known as “winged” beans, has a uniquely shaped, ruffled pod. Growing red blooms in the summer, this vining plant can adjust and develop well in poor soil. 

Autumn Star Kalettes

As cute as its name sounds, this cross between Brussels sprouts and kale is the perfect marriage that allows us to get the best of both worlds. Autumn Star has kale florets that sprout on a thick stalk and has a vibrant blue-green hue on its foliage and has deep purple colored stems. 

Heirloom Pineapple Alpine Strawberry 

These incredibly unique tasting strawberries have a hint of both pineapples and roses wrapped into beautifully yellow-tinted parcels. Heirloom Pineapple alpine strawberries provide fruits during the whole summer season and grow on a molding plant. They can grow in containers like window boxes or hanging baskets to protect them from hungry rabbits. 

Black Nebula Carrot

The unusual coloration of this carrot is sure to bring a deep, rich color in anyone’s pantry. The Black Nebula carrot has such dark purple color that it almost looks black. Even when cooked, it keeps this coloration and flashes a white center when cut into. 

Strawberry Spinach

While most people barely even acknowledge the spinach anymore, this variant will surely up your salad game in a snap. The Strawberry Spinach gives you both leaves and berries that are edible, which give you that splash of color for a summer salad. You can grow a bunch of these leafy greens best in moist soil in a well-lit area. 

Oyster Leaf

Locked within these thick, green leaves are the subtle yet exquisite taste of oysters that everyone can appreciate. While it is uncommon, Oyster leaf are known for their resilience and can thrive in different conditions. It’s best to start from seeds with this plant to allow for more control and to make sure it is well adjusted in the garden. 

Silver Queen Okra

Shake things up in your homemade meals and add a touch of color and flavor with these green pods. The Silver Queen okra can grow up to six inches long and are best picked when it’s young and tender to make great dishes. 

Brad’s Atomic Grape Tomato

You may not know how Brad is, but these killer tomatoes will be the talk of the town, dazzling everyone with shades of green, purple, yellow and red streaks.  These bite-sized tomatoes have a sweet flavor and grow in clusters on their vines. They’re also easy to grow, just give them a stake to climb up from the ground or inside a container.
