This weekend was super chill. On Saturday Lin and I did a few recipes and then ventured to the outlet malls to see what kind of deals we could find. FUN FACT: I NEVER buy anything full price…unless it’s from Lululemon and even then I get my R&D discount. Guess where we struck gold?

OLD NAVY.

Crazy, right? I haven’t shopped at Old Navy since I was in middle school, but they are stepping up their game and their stuff is SUPER reasonably priced! I got a bunch of tanks, a cute dress, and a romper. We also got some really cute sweaters from the LOFT outlet for $3.88. Another FUN FACT: In Minnesota, clothes are not taxed. JACKPOT.

On Saturday night I watched a soccer game and then literally went to bed at 8:45. I had to get up at 4:45 that morning to take my brother to the airport, so I was exhausted by 9PM. I don’t even care because 8:45 was really like 9:45 with daylight savings  Sunday was pretty chill too. I went to a coffee shop in the AM and then met my PEC gym friends for a St. Patty’s Day brunch at Morrissey’s Irish Pub after they did an 8 mile run around the lake. Unfortunately I can’t run at the moment (THANK YOU BROKEN FOOT…STORY COMING TOMORROW!), so I scored us a table. At least I’m good for something. Everyone ordered bloody’s, but I think they are gross (who is with me!), so I got a cider. NOM.

So dis hash, yo.

Who woulda ever thunk to use a cheese grater for a sweet potato. NOT ME.

When we were in San Miguel, Lin’s mother in-law made us a sweet potato hash and that’s what she used to cut the sweet potato. GENIUS. This is inspired by Mary’s hash. Lin and I decided we needed to eat more veggies, so we packed this hash full of them. We’re talking….

  • kale
  • sweet potato
  • onion
  • red pepper

tater

We picked up some delicious chicken sausage from Trader Joe’s to complete the recipe. Ours came uncooked, so we boiled those bad boys in water before sauteeing, but you can totally use the pre-cooked kind. If you’re looking for a good brand, I’d go Trader Joe’s or Aidell’s.

For seasonings we kept things super simple…garlic, salt, pepper, and a little bit of balsamic. OH BALSAMIC I LOVE YOU.

  • 1 large sweet potato, peeled
  • 1 red pepper, finely diced

  • 4 cups kale, deboned
  • salt and pepper, to taste (be generous!)
  • 2 tablespoons balsamic vinegar
Instructions

  2. Add in sweet potato, onion, red pepper, and sliced chicken sausages. Sauté for about 5-7 minutes or until onions become translucent.
